There is not currently a way to bounce an email address from Gmail itself. There are Email clients (Such as Apple Mail) that have that option. Be aware, if you bounce and email from someone who KNOWS that you still have the address, that will not prevent them necessarily from sending you more messages. It may even appear to be dishonest.
A better solution would be to set up a filter with a 'canned response' that prevents you from seeing the message and lets the individual know that messages from them are unwelcome.
First, you must create a canned response.
- Click "Compose Mail" to start a fresh message.
- Do NOT enter an email address or subject, but in the body of the message type what you want to send as a canned response. Then, click on Canned responses.
- Now, create the response by selecting "New canned response" under the Save dialog.
- Next, give your Canned response a name.
- Click ok.
- Discard this message as you are now finished making the canned response.
- Create a filter to delete emails and send the canned response.
- Enter the email address you wish to delete messages from.
- Click "Next Step"
- Select Delete and canned response and "Create Filter".
Now, any messages from that person will be deleted and they will get the message.
Of course, you can select the offending email (provided you have the canned response saved prior) and then click "More actions>create filter from message" and make your filter from here.
